Peanut Butter Cheesecake Bars

Well, this recipe is a keeper!  It’s so easy to make and the result yields bars that taste like cheesecake with peanut butter and chocolate mixed in.  Does it get any better?  It totally does: I made them for BK’s friends and they gobbled them up…and then told him what a lucky guy he was to have me.  So sweet.  Just don’t tell them they took 10 minutes to make and were undoubtedly the easiest thing I did all week!

They thaw out pretty fast, so I suggest serving them directly out of the freezer.  Not that they’ll last long enough to thaw anyway…

Ingredients:

1 1/4 cup crushed chocolate wafer cookies
5 tablespoons melted butter
1/2 teaspoon gelatin
8 ounces room-temperature cream cheese
7 ounces sweetened condensed milk
1/4 cup peanut butter
1/2 cup mini chocolate chips

Directions:

Mix together the cookie crumbs and the melted butter. Press into the bottom of an 8×8″ baking dish. Set aside.

In a small microwaveable bowl, combine the gelatin with 1 tablespoon of water. Let sit for 5 minutes.

In a bowl, beat together the cream cheese, sweetened condensed milk and peanut butter until smooth. Microwave the gelatin for 10 seconds to melt, then beat into the cream cheese mixture. Stir in the chocolate chips. Gently spread the mixture over the crumb crust.

Freeze for 20 minutes then cut into squares.
